Short answer
Downloading an offline map, planning a route in an area you have not prepared, weather, live sharing a walk, handing a route to a friend, and messaging support. Everything else runs on the phone.

The short list
Downloading or updating an offline map region — necessarily, since the data has to come from somewhere.
Planning a route in an area with no prepared offline map. Without local map data there is nothing on the phone to calculate a path from, so Walkable asks a routing service instead.
Weather, which is fetched using coordinates rounded to about a kilometre rather than your exact position.
Live sharing a walk, and sharing a route with a friend — both send something to another person, so both need a connection.

What never needs one
Recording. Your history. Your photos and notes. Statistics. Anything already stored on the phone. None of these consult a server, ever.
